Ingredients for 2 servings:
- ¾ cup oatmeal
- ¾ cup flour
- 2 tsp baking powder
- ½ tsp salt
- 2 tsp sugar
- ¾ cup milk
- 2 eggs
- 2 tsp oil, e.g. olive oil
- Oil, for frying

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Oaty Pancakes according to a New Zealand recipe
Mix the flour with the oats in a bowl and add salt and sugar. In another bowl, whisk together the eggs, milk, and oil. Then fold this mixture into the batter and mix well. Heat a little oil in a frying pan. Add a few spoonfuls of batter to the pan, fry, and turn the pancakes when they are golden brown on the bottom and bubbles appear on the top. Briefly finish frying on the other side. Make sure the pan is not too hot, otherwise the pancakes will burn quickly. Add a little more oil to the pan every now and then if the pancakes stick to the bottom. Serve with grilled ham, melted honey, syrup, bananas, or other fresh fruit. This recipe makes about four pancakes.
