Ingredients for 4 servings:
- 2 m.-sized eggs
- 2 tbsp, levelled sugar
- 1 pinch of salt
- 1 tbsp vanilla paste
- 200 ml milk
- 200 g flour
- 1 tsp, heaped baking powder
- Oil for frying
- e.g. cinnamon sugar or maple syrup
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Beat the eggs with sugar, salt, and vanilla paste. Now add the milk and whisk it into the egg mixture. Sift the flour with the baking powder and stir into the egg mixture. Heat the oil in a non-stick pan and add the batter in small portions. I always use a slightly smaller soup ladle or sauce ladle. Fry the pancakes over medium heat until golden brown on both sides. Serve the pancakes with cinnamon-sugar mixture or maple syrup. Tip: For the cinnamon-sugar mixture, mix cinnamon with vanilla sugar instead of regular sugar.
