Luxury scrambled eggs with sparkling wine

Ingredients for 2 servings:

  • 4 eggs
  • salt and pepper
  • 2 tbsp sparkling wine or champagne
  • 2 tsp butter, for the pan
  • 1 tomato(s), diced

Instructions

Wonderfully fine scrambled eggs, prepared with sparkling wine instead of milk.

Beat eggs in a bowl with salt and pepper. Add sparkling wine and stir briefly again. Melt butter in a pan over low heat, add eggs and tomatoes. Allow to set very slowly, occasionally using a spatula to scrape the set egg from the edge of the pan toward the center. It’s done when it’s no longer wet, but not completely dry or even browned. This scrambled egg has a very subtle sparkling wine flavor, giving such a quickly prepared breakfast a truly luxurious feel.
