Ingredients for 4 servings:

  • 3 tbsp oil
  • 4 cod fillets, approx. 2.5 cm thick
  • Salt
  • pepper
  • 1 onion(s), finely chopped
  • 2 garlic cloves, crushed
  • 1 bell pepper(s), red, finely diced
  • 1 tsp coriander, ground
  • 1 tsp cumin, ground
  • 1 tsp ground turmeric
  • ½ tsp spice mix (Garam Masala)
  • 400 g tomatoes, fresh or from a can, peeled and chopped
  • 150 ml coconut milk (unsweetened)
  • 1 tbsp coriander, freshly chopped or parsley

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Heat the oil in a pan and brown the fish on both sides, but do not cook thoroughly. Season with salt and pepper. Remove from the pan and set aside. Add the onion, garlic, paprika, and spices to the pan and fry for 2 minutes, stirring. Add the tomatoes, bring to a boil, and simmer for 5 minutes. Add the fish to the vegetables in the pan and simmer for about 8 minutes, until cooked through. Remove the fish from the pan and keep warm. Add the coconut milk and coriander or parsley to the pan and heat gently. Pour the sauce over the cod fillets and serve immediately. Serve with rice or naan bread.
