Salmon fillet in wild garlic and white wine sauce

Ingredients for 2 servings:

  • 2 salmon fillets
  • 1 bunch wild garlic (exact amount according to taste)
  • 1 tbsp butter
  • 300 ml milk
  • 20 g potato flour or sauce thickener if necessary
  • 100 ml white wine, more to taste
  • Salt

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Heat butter in a pan. Pat the salmon fillet dry and sear briefly on all sides in the hot butter, then remove from the pan. Trim and finely chop the wild garlic, add it to the pan with the butter, and cook briefly. Sprinkle the potato flour into the pan (making sure there are no lumps) and mix well with the butter. Deglaze with the milk and bring to a boil while stirring. Add white wine to taste and season with salt. Then return the salmon to the sauce and simmer for a few minutes. Serve with vegetable rice.
