fruity, fluffy, juicy and versatile

Cream the butter with the sugar – or with a mixture of sugar and vanilla sugar – until creamy. Beat in the eggs one at a time and beat until fluffy. Mix the pinch of salt, flour, and baking powder and stir in until a smooth mixture is formed. If desired, finely chop the peaches and fold them into the batter. Line a muffin tin with muffin cases and divide the batter between the holes. This batter makes enough for 12 muffins. Sprinkle a few almond slivers on top of the batter and bake the muffins at 175°C (top/bottom heat) for about 25-35 minutes until golden brown. The recipe is very versatile, both in terms of the amount of batter and the ingredients. Cinnamon, cocoa, marzipan, lemon zest, or Nutella can be added to the batter, and the fruit can be changed in quantity and selection, omitted, or replaced with chocolate chips, chopped nuts, etc.
