Creamed chanterelles

Ingredients for 4 servings:

  • 50 g bacon, streaky and smoked
  • 2 tbsp butter
  • 100 g ham, cooked
  • 6 spring onions
  • 250 g chanterelles, fresh (or from a can)
  • 125 g crème fraîche
  • 1 shot of sparkling wine or champagne
  • 1 tbsp chives, chopped
  • 1 tbsp parsley, chopped
  • Salt and pepper, freshly ground
  • 1 pinch(s) of sugar
  • lemon juice
  • Worcestershire sauce
  • Lettuce, some leaves

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the bacon and fry in butter. Cut the ham into small cubes, thinly slice the spring onions, add both to the bacon, and sauté briefly. Briefly sauté the cleaned chanterelles. Stir in the crème fraîche, add a dash of sparkling wine or champagne, and simmer over high heat for 5 minutes. Stir in the parsley and chives, season with salt and pepper, and add a little sugar, lemon juice, and Worcestershire sauce to taste. Let cool slightly and serve in cocktail glasses on lettuce leaves.
