Onion pesto

Ingredients for 5 servings:

  • 1 ½ kg onion(s)
  • 1 stalk garlic (garlic greens)
  • 100 g sunflower seeds
  • 250 ml sunflower oil
  • 3 lemons
  • 5 tbsp salt
  • 2 tbsp chili powder
  • 4 tbsp paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Spicy, but not spicy pesto for pasta or grilled meat

Peel the onions and chop into large pieces. Wash, peel, and chop the garlic greens into large pieces. Place the onions, garlic greens, and sunflower seeds in a large pot, pour over the oil, and sauté for about 2 minutes. Squeeze the lemons, pour over the juice, and cook for about 3 minutes. Then puree everything and season with the spices. Bring the pesto back to a boil while it’s still hot and pour into screw-top jars. Store in the refrigerator. I use the pesto with pasta or as a sauce for grilled food.
