Eggs and bagels
Cut open the bagel and butter it, halve the tomatoes and set them aside for now. Crack the eggs into a bowl and whisk them together. Season with salt and pepper, add the basil leaves and mix them together vigorously with a fork. For fans of spice, spice up the eggs a bit with a seedless chili pepper or a hot sauce. Pour the beaten eggs into a small, buttered pan and then make either scrambled eggs or an omelet, depending on your taste. For scrambled eggs, push the egg aside after it has set. Cut the bagel in half vertically and toast it in the pan. Sandwich the cherry tomatoes between the bagel halves and then serve them on a board with the eggs. For an omelet, add the cherry tomatoes to the raw eggs and fry. Then either simply slide the omelet onto the board and place the bagel on top, or skillfully sandwich the omelet between the bagels, creating a variation on a burger.
