Fig mustard – a fruity and spicy side dish

Ingredients for 1 servings:

  • 1 kg fig(s), ripe and good fruits, washed
  • 500 g gelling sugar 2:1
  • 12 tbsp yellow mustard seeds
  • 8 tbsp white wine vinegar
  • ½ tsp chili flakes, hot
  • 1 tsp elderflower syrup
  • 1 tsp vanilla syrup
  • 1 tsp citric acid
  • n. B. Salt

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

It depends on the ingredients!

Peel the figs, cut them into eighths, and toss them with the gelling sugar. Cook the figs in a saucepan over medium heat for about 30 minutes until soft. Grind the mustard seeds in a mortar or finely in a mill (e.g., a coffee grinder). Add all the listed ingredients and blend the mixture in a blender (or similar) until smooth. Season the mustard with salt and pour into clean, sterilized twist-off jars. Place the jars on a damp cloth and seal tightly immediately after filling. The specified amount yields approximately 5-6 jars of delicious fig mustard.
