Ingredients for 4 servings:

  • 2 zucchinis
  • 1 onion(s)
  • 1 eggplant(s)
  • 5 tomatoes
  • 300g tofu
  • 300 ml coconut milk
  • some curry
  • Garlic
  • pepper
  • Ginger

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

vegetarian and delicious

Finely chop the onion, thinly slice the zucchini and eggplant, and then quarter them. Cut the tofu into thin strips. Sauté these ingredients. Chop the tomatoes and add them. Add the coconut milk and season. Let it cook a little longer and serve with rice or noodles.
