Ingredients for 4 servings:
- 2 pork fillets
- 200 g ham (Serrano), thinly sliced
- 2 cups of cream
- 200 g sweet Gorgonzola
- some mustard
- n. B. Salt
- n. B. Pepper, black, from the mill
- some water
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
to prepare perfectly
Place the ham on a cutting board, slightly overlapping the length of the fillet. Place the fillet on top of the ham, spread with mustard, and season with salt and freshly ground pepper. Season with salt carefully; the ham will also release some salt. Now roll up the fillet with the ham strips and cut into slices about 4 cm wide. Repeat with the other piece of fillet. Rub a pan with oil and heat until thoroughly heated. Place the fillet slices, flesh side down, in the pan and only turn when they release from the pan. This only takes a short time, though. Transfer the fillets from the pan directly to a baking dish. Boil the pan juices with water, add the cream and Gorgonzola, and reduce slightly, adjusting the seasoning if necessary. Pour the resulting sauce over the fillets and place in the oven preheated to 180°C for about 20 minutes. Prepare in the morning and bake in the evening. A clean and perfectly cooked dish. Serve with spaetzle, tagliatelle, or even baguette and salad.
