Zucchini in Bacon

Ingredients for 2 servings:

  • 1 kg zucchini
  • 10 slices of bacon
  • 1 handful of ham, diced
  • 1 ball of mozzarella
  • 1 handful of Gouda, grated
  • 1 bell pepper
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the zucchini and halve it lengthwise. Scoop out the seeds with a spoon and place them in a bowl. Add the seeds to the filling, provided they aren’t too big or hard. Season the zucchini with salt and pepper. For the filling, dice the bell peppers, add them to the diced ham, and mix with the seeds or some of the hollowed-out zucchini flesh, if desired. Season well with salt and pepper. Pour the filling into the cavity, top with mozzarella, and sprinkle with Gouda cheese. Brush two sheets of aluminum foil with olive oil and place five slices of bacon next to each other. Place the zucchini on the bacon and wrap it in bacon, then wrap the aluminum foil around everything. Preheat the oven to 180°C and bake for about 20 minutes. The temperature and time may vary depending on the oven and the zucchini. Baguette goes well with this.
