Quick potato salad

Ingredients for 4 servings:

  • 500 g potatoes
  • 250 g tomato(s) (cocktail tomatoes)
  • 3 stalk(s) spring onion(s)
  • 75 g lean diced ham
  • olive oil
  • Balsamic vinegar
  • Mustard
  • Herbs of your choice (e.g. chives)
  • Salt

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel and boil the potatoes. Let them cool and then chop them finely. Wash the spring onions and slice them into rings. Wash and quarter the cherry tomatoes, and place them in a bowl with the potatoes, tomatoes, diced ham, and spring onions. Prepare a dressing with 2/3 olive oil, 1/3 balsamic vinegar, mustard, and herbs of your choice and drizzle over the salad. Season to taste with salt and pepper.
