Ingredients for 4 servings:
- 1 bunch of chives
- 1 egg yolk
- 10 g butter
- 2 tbsp flour
- 120 g quark
- 1 beetroot, cooked
- 800 ml chicken broth
- salt and pepper
- salt water
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Finely slice the chives. Combine the egg yolk, butter, flour, quark, and chives. Season with salt and pepper. Scoop the dumplings with a teaspoon and let them simmer in boiling salted water for 10 minutes. Cut the beetroot into thin strips and add them to the hot broth. Season with salt and pepper. Drain the quark dumplings and serve in the broth.
