Gratinated pork fillet in chutney – curry – cream

Ingredients for 2 servings:

  • 450 g pork fillet(s)
  • 300 g cheese (Edam)
  • 3 apples
  • 3 bananas
  • 1 tbsp tomato paste
  • 200 ml cream
  • 250 ml mango chutney, sweet
  • 1 tbsp curry powder
  • 4 tbsp olive oil
  • margarine
  • salt and pepper
  • basil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 60 degrees Celsius (fan/convection oven). Heat the olive oil in a pan. Wash the pork fillet, pat dry, and cut into medallions. Sear the meat and season with salt and pepper. Grease a baking dish with margarine and keep the meat warm in the oven. Peel the bananas and apples. Core the apples. Slice the bananas and thinly slice the apples. Add the banana slices and apple slices to the meat in the baking dish. Heat the pan juices and tomato paste. Add the mango chutney and curry powder and let it reduce slightly. Stir in the cream, season with salt and pepper, and heat briefly. Pour the sauce over the meat and fruit in the baking dish. Sprinkle with cheese and then place in the oven at 200 degrees Celsius (400 degrees Fahrenheit) for about 20 minutes. Sprinkle with fresh basil leaves.
