Quinoa Caprese Salad

Ingredients for 2 servings:

  • 1 cup quinoa
  • 1 vegetable stock cube
  • 1 slice(s) of bread
  • 3 tomatoes
  • 3 tbsp olive oil
  • 2 cloves garlic, chopped
  • 1 mozzarella
  • 1 lemon(s), the juice
  • some basil, fresh
  • some oregano
  • salt and pepper
  • n. B. water

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Place the quinoa in a sieve and rinse with hot water to remove any bitterness. Add the diced vegetables to the water and bring to a boil. Add the quinoa and simmer in the broth for about 15 minutes. Meanwhile, chop the tomatoes and mozzarella. Once the quinoa is ready, strain out the remaining water and place the quinoa in a large bowl. Let it cool slightly, then add the mozzarella, tomatoes, and herbs. Add olive oil. Season to taste with salt, pepper, 1 garlic clove, and lemon juice. Finally, dice the bread and fry it in olive oil with the remaining garlic clove. Add the still-hot bread cubes to the quinoa mixture, mix well, and serve.
