Grandma Marianne's cabbage rolls

Ingredients for 6 servings:

  • 1 ½ kg white cabbage or savoy cabbage
  • 750 g minced meat, mixed or just beef
  • 1 m.-sized egg(s)
  • 1 roll, from the day before
  • 1 m.-sized onion(s)
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp caraway seeds
  • 3 tbsp raw ham cubes
  • Oil or clarified butter for the pan
  • 1 liter meat broth or vegetable broth
  • e.g. sauce thickener or cornstarch

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

For the meat dough: Peel the onion and dice it into small cubes. Soak the rolls in a little water. After a few minutes, squeeze the excess water out well. Mix both ingredients together with the ground meat, egg, salt, and pepper to form a smooth dough. Season with salt and pepper if desired. Then refrigerate. Remove the outer leaves from the cabbage and remove as much of the stalk as possible with a sharp knife. Place the cabbage in a pot and pour in enough water to almost cover it. Bring to a boil, then turn off the heat and let it simmer for a few more minutes. Remove the cabbage and remove the outer leaves as needed. Place the leaves on a kitchen towel. Flatten the thick leaf ribs. Repeat this process until you have as many leaves as you need. I use two leaves per roulade. Stack one large and one small cabbage leaf on top of each other, place about 2 heaped tablespoons of meat dough on top, and roll it up into a small parcel. Secure with string or a toothpick. Heat the fat in a pan and brown the ham cubes, caraway seeds, and cabbage rolls on all sides. Remove the rolls and place them in a large pot. Cut the remaining cabbage into pieces and brown them in the same way as the rolls. Top up with the meat broth and add to the cabbage rolls. Bring to a boil, then simmer over low heat for about 45 minutes. Remove the cabbage rolls, let the broth reduce slightly in the pot, and thicken with cornstarch or a sauce thickener. The sauce should be creamy; add the rolls and let them simmer for a while. Boiled potatoes go very well with this.
