Ingredients for 1 servings:
- 150 g marzipan paste
- 150 g butter or margarine, soft
- 100 g sugar
- 150 g spelt flour, wholemeal
- 3 tsp, leveled baking powder
- 3 large eggs or 4 small ones
- 70 ml Amaretto
- 1 handful of almond flakes
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
with wholemeal spelt flour and marzipan, makes 12 pieces.
Mix the marzipan with the softened butter or margarine using a fork. Then gradually add the sugar and eggs. It’s best to beat for 30 seconds after each egg (using a hand mixer or food processor), then add the next egg. The mixture should form a smooth mixture. Mix the flour with the baking powder and add to the marzipan mixture. Finally, stir in the Amaretto. Pour the batter into 12 small muffin tins and sprinkle with flaked almonds. Bake for 20 minutes at 180°C (convection oven). If you like, you can also add fruit to the batter: These muffins taste heavenly with apple and a dash of cinnamon, but they would also be delicious with jarred cherries or canned mandarins.
