Ingredients for 4 servings:
- 2 m.-sized eggs
- 60 g wheat flour (white flour)
- 3 g salt
- 2 g pepper
- 750 ml milk
- 120 g cheese (Appenzeller)
- 50 g smoked bacon
- 1 m.-sized onion(s)
- 1 tbsp oil
- 250 g wheat flour (white flour)
- 100 g butter
- 25 g salt
- 100 g water
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 10 minutes
Cheese tart
Mix the eggs, white flour, salt, pepper, and milk. It’s best to use only a little milk at the beginning. This will create the topping. Dice the onions and sauté them in a little oil. Set aside and let cool. Fry the bacon cubes with the remaining oil until crispy. Also set aside and let cool. For the dough, mix the flour, butter, salt, and water. Knead until a dough forms. Then refrigerate for 1 hour and let cool. Roll out the dough and line a springform pan (approx. 30 cm) with it. Prick all over with a fork. Spread the onion and bacon cubes on the dough, sprinkle with the cheese, and spread the topping over the cheese. Mix lightly, ideally with your finger. Preheat the oven to 200°C (top/bottom heat) and bake the tart for 40 minutes. Remove from the oven and after 5 minutes, remove from the pan and let cool on a wire rack.
