Spicy cucumber vegetables

Ingredients for 2 servings:

  • 2 cucumbers
  • 1 chili pepper(s)
  • dashes Tabasco
  • 3 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • 1 tbsp, heaped sugar, brown
  • 20 g butter
  • n. B. Salt
  • 1 tbsp, heaped curry
  • 2 tsp red curry paste

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel the cucumbers, halve them lengthwise, and then cut them into pieces. Toss the cucumbers in a bowl with Tabasco and salt and let stand for 10 minutes. Drain the cucumbers and sauté them in hot butter in a pan. Add the finely diced chili pepper, balsamic vinegar, and sugar, and let them caramelize. Now add the soy sauce, curry sauce, and curry paste, bring to a boil briefly, and season again with salt, vinegar, and sugar. This is a great side dish for poultry or fish. Vegetarians can serve it with rice or noodles.
