Nectarine dream

Ingredients for 4 servings:

  • 4 nectarines, ripe
  • 8 tbsp sugar
  • 3 cl Aperol , if you don’t like the bitterness, you can also use Grand Marnier
  • 1 tsp vanilla sugar (bourbon)
  • 200 ml apple juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Quarter the nectarines and cut them into cubes. Melt the sugar in a stainless steel saucepan over medium heat. Add the nectarine pieces to the melted sugar and glaze. Now increase the heat to high. Deglaze with Aperol and apple juice and reduce the heat again. Immediately cover the pan and simmer over low heat for about 20 minutes. When the nectarines are soft, remove the pan from the heat and season with vanilla sugar. I recommend this nectarine dream with crème brûlée or panna cotta. In either case, refine both with white port wine.
