Zucchini fritters with radish sauce

Ingredients for 4 servings:

  • 400 g potatoes
  • 400 g zucchini
  • 1 small onion(s)
  • 2 eggs
  • 250 g quark (cottage cheese)
  • 100 g oat flakes
  • 2 tbsp breadcrumbs
  • salt and pepper
  • 1 bunch of radishes
  • 1 cup sour cream
  • Salt
  • chives

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Wash, peel, and grate the potatoes, then let stand. Wash the zucchini, trim the ends, and grate as well. Then add it to the potatoes. Peel and finely chop the onion. Add the onion, eggs, curd cheese, oats, and breadcrumbs to the grated vegetables. Mix everything well, season, and let stand for about 10 minutes. For the radish sauce, wash, trim, and grate the radishes. Mix with the sour cream and season with salt and chives. Heat oil in a pan and fry the batter in batches with a spoon. Serve the zucchini fritters with the radish sauce and eat.
