Caramelized butter quinces

Ingredients for 4 servings:

  • 2 quinces
  • 1 lemon(s), some juice
  • 2 tbsp sugar
  • 2 tbsp butter

Grate the quinces, halve them, and remove the core. Cut them into thin wedges and cook them side by side in a large pan with a little lemon water for about 5 minutes. Once the lemon water has evaporated, sprinkle the sugar over the quinces and melt the butter in the pan. Caramelize the quinces by tossing them in the butter and sugar mixture. Serve with candied walnuts and quark mousse.
