Macaroni salad

Ingredients for 3 servings:

  • 250 g macaroni, short (preferably homemade)
  • 2 eggs
  • 1 bell pepper(s), red
  • 1 tomato(s)
  • 2 spring onions
  • 100 g cooked ham
  • 2 tbsp parsley
  • 100 g mayonnaise (preferably homemade)
  • 1 lemon(s)
  • 1 tbsp sugar
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Bring a pot of salted water to a boil and cook the macaroni according to the package instructions (cook homemade macaroni in salted water for 5 minutes). Drain in a colander and let cool. Bring a second pot of water to a boil and boil the eggs for 10 minutes. Refresh, peel, and let cool. Quarter, deseed, wash, and finely dice the peppers and tomatoes. Trim, wash, and thinly slice the spring onions. Chop the parsley. Combine everything in a bowl. Peel the eggs, roughly chop them, and add them to the vegetables. Dice the cooked ham and add them. Squeeze the lemon and add the juice to the salad along with the mayonnaise, sugar, salt, and pepper. Mix well. Stir in the macaroni and serve.
