Stuffed tomatoes

Ingredients for 2 servings:

  • 6 large tomatoes
  • 250 g minced beef
  • 200 g mushrooms
  • 2 large shallots
  • 1 point mozzarella
  • salt and pepper
  • Paprika powder, sweet
  • olive oil
  • 1 bunch of basil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Preheat the oven to 200°C. Wash the tomatoes, cut off the tops, and hollow out the tomatoes. Dice the shallots, mushrooms, and mozzarella. Chop the basil. Fry the shallots in olive oil until translucent. Add the mushrooms and cook. Then add the minced meat and cook. Season to taste and remove from the heat. Stir in the basil and mozzarella. Fill each tomato with 2-3 tablespoons of the mixture and drizzle with olive oil. Place the tomato lid on top and place the tomatoes in the oven for 20-30 minutes.
