Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes
1 cup = 200 ml
Beat 6 eggs on high speed for about 3 minutes until frothy, then add the oil and beat for another half minute. Stir in the sugar and orange juice. Combine the flour and baking powder, add to the mixture, and mix to form a smooth batter. Spread the batter on a greased, deep baking tray. Wash and dry the apples thoroughly, quarter them unpeeled, and core them. Make deep cuts lengthwise in the backs of the apple quarters and cover the batter densely with them. Beat 3 eggs, beat in the yogurt and vanilla sugar on high speed, and spread this mixture evenly on top, spoonful by spoonful. Preheat the oven to 200°C and bake the cake at 180°C for about 50 minutes. At the end of the baking time, be sure to do the skewer test. The finished cake can be topped with apricots or served simply with vanilla sauce or whipped cream.
