Semolina and mandarin muffins

Ingredients for 1 servings:

  • 2 cans of tangerine(s)
  • 100 g margarine
  • 90 g sugar
  • 1 vanilla sugar
  • 2 eggs
  • 100 g wheat flour
  • 100 g soft wheat semolina
  • 2 tsp baking powder
  • 100 g double cream cheese (natural)

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Makes 12 muffins

Drain the mandarins well. Beat the margarine with sugar and vanilla sugar until fluffy, beating in the eggs one at a time. Stir in the cream cheese. Combine the flour, semolina, and baking powder and stir in. Finally, carefully fold in the mandarins. Pour the mixture into greased muffin cups and bake in a preheated oven at 180°C for 30 minutes.
