Ingredients for 4 servings:
- 200 g pumpkin flesh, grated on a Bircher grater
- 2 clove(s) garlic, squeezed
- 1 tbsp rapeseed oil for steaming
- 4 tbsp vegetable broth
- 1 bay leaf
- 3 tbsp pumpkin seeds, finely chopped
- 1 tsp orange peel, untreated, grated
- 2 tbsp orange juice, freshly squeezed
- 2 tbsp pumpkin seed oil
- chili flakes
- Salt and pepper, from the mill
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Sauté the pumpkin and garlic in the butter. Add the chili flakes and bay leaf, cover, and sauté with the broth until softened. Remove the bay leaf and puree with a hand blender. Add the pumpkin seeds, orange zest, orange juice, and pumpkin seed oil. Season with salt and pepper. Mix everything thoroughly.
