Ingredients for 1 servings:
- 250 g flour
- 20 g yeast, fresh
- 1 cup of lukewarm water
- ½ tsp salt
- 2 cups of crème fraîche, alternatively sour cream
- some salt and pepper
- 2 onions, diced
- 300 g bacon (belly bacon), finely chopped

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes
similar to tarte flambée
Make a yeast dough from flour, yeast, water, and salt and let it rise for about 1 hour. Then add the crème fraîche and mix with salt and pepper. Roll out the dough and place it on a greased baking sheet. Spread the crème fraîche mixture on top. Lightly sauté the diced onion in hot fat and spread it over the crème fraîche. Then sauté the finely chopped bacon and spread it on top. Bake the whole thing in a preheated oven at 180°C for about 25 minutes. Note: I always make double the batch and use a whole yeast cube. This should be enough for two baking sheets.
