Salmon in Leek Cream Sauce

- 500 g Salmon fillet
- 1 tbsp Oil
- 2 Onions
- 1 pole Leek
- 250 g Brown mushrooms
- 200 ml Vegetable broth
- 200 ml Cream
- Salt pepper
- 1 tsp Mustard
- 1 tsp Paprika powder
- Peel and dice the onions.
- Wash the leek thoroughly and cut into rings.
- Cut the salmon fillet into cubes.
- Heat a large pan and let the oil get hot in it.
- Add the onion cubes and toast them a little.
- Clean and chop the mushrooms.
- Add the leek strips and mushrooms and sauté them, stirring occasionally.
- Add a pinch of salt and pepper.
- Deglaze the vegetables with the vegetable stock and cream and cook for 5 minutes.
- Now add the mustard and bring to the boil again.
- Taste and season again if necessary.
- Put the salmon cubes in the sauce and let them steep briefly.
- It goes well with rice or pasta.
