Ingredients for 1 servings:

  • 250 g marzipan
  • 1 egg yolk
  • Sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Dutch almond cookies, for about 20 pieces

Preheat the oven to 200°C (400°F). Thoroughly mix the marzipan and egg yolk. Form the mixture into a cylinder, approximately 2.5 cm in diameter. Roll the cylinder in sugar. Cut the cylinder into 1.5 cm slices and coat them in sugar. Bake in the oven for 8-10 minutes, until the moppen are golden brown. The dough could be “extended” with almond flour, if desired, but I don’t recommend any changes for now. A Weesper Mop is a person born in the municipality of Weesp in North Holland. Moppen can also be translated as “joke.”
