Marzipan cake

Ingredients for 1 servings:

  • 4 eggs
  • 150 g sugar
  • 80 g flour
  • 80 g cornstarch
  • ½ tsp baking powder
  • 1 pinch of salt
  • 400 ml milk
  • 1 pack of pudding powder, vanilla flavor
  • 1 packet of vanilla sugar
  • 1 tbsp sugar
  • 100 g butter or margarine, soft
  • 350 g marzipan – raw mass
  • 100 ml orange juice, preferably freshly squeezed
  • 300 g marzipan – raw mass
  • 1 tbsp powdered sugar
  • 40 g dark chocolate coating

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

For the batter, beat the egg whites, 40g sugar, and salt until stiff peaks form. Beat the egg yolks and remaining sugar until frothy and add to the beaten egg whites. Carefully fold in the cornstarch, flour, and baking powder. Line a springform pan with parchment paper and spread the batter on top. Bake in a preheated oven at 190°C for about 25 minutes until golden brown. Make a pudding from the milk, vanilla pudding, vanilla sugar, and sugar, then let it cool while stirring. Beat the softened butter with a mixer until creamy and stir in the pudding. The pudding and butter should be roughly the same temperature. For the filling, mix the marzipan and orange juice with a hand blender. Cut the cooled dough into 3 thin slices. Spread the marzipan-orange mixture over the bases and place them on top of each other. Spread about 2/3 of the buttercream all around the cake. Sprinkle the work surface with icing sugar and roll out the remaining marzipan to form a cake ring and a cake lid. Decorate with striped ornaments made of chocolate coating and the remaining buttercream.
