Ingredients for 1 servings:

  • 250 g spelt, crushed
  • 50 g spelt flakes
  • 100 g cane sugar
  • 150 g butter
  • ½ tsp cinnamon
  • 1 pinch of clove(s) (ground)
  • 1 pinch of anise (ground)
  • 1 pinch of cardamom (ground)
  • 1 egg(s)
  • ½ tsp baking powder

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the spelt flour, spelt flakes, and baking powder in a bowl. Add the sugar, butter, egg, and spices and knead into a dough. This is best done by hand. Shape the dough into a ball, wrap it in cling film, and refrigerate for about 40 minutes. Preheat the oven to 180°C. On a floured surface, roll the dough into a log about 2.5 cm thick (it’s best to divide the dough into two portions) and cut into equal-sized pieces. Shape the pieces into balls in your hands and flatten them (the cookies will retain their size during baking). Place the cookies on a baking sheet lined with baking paper and bake for about 12-15 minutes. You can also roll out the dough and cut out any shapes you like.
