Florentines without candied fruit

Ingredients for 1 servings:

  • 175 g sugar
  • 75 g honey
  • 125 g butter
  • 150 g cream
  • 175 g almond(s), flakes
  • 100 g sunflower seeds
  • 150 g chocolate coating (semi-sweet)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Heat the sugar, honey, butter, and cream in a saucepan. Simmer gently for about 5 minutes, stirring constantly. Add the flaked almonds and sunflower seeds and simmer for another 5 minutes, stirring frequently. Preheat oven to 200°C. Spread the Florentine mixture onto a baking sheet lined with baking paper. Place on the second rack from the bottom of the oven and bake for about 12 minutes until golden brown. Allow to cool on the baking sheet, then turn out onto the work surface and remove the baking paper. Melt the chocolate coating and spread it onto the smooth side of the sheet. Allow to set, turn over, and cut into small diamond shapes.
