Quick cake with sunken apples

Ingredients for 1 servings:

  • 120 g flour
  • 40 g cornstarch
  • 100 g sugar
  • 3 tsp, leveled baking powder
  • 1 pinch of salt
  • 150 ml milk
  • 150 ml rapeseed oil
  • 3 eggs
  • ½ vanilla pod(s), scraped out the pulp
  • 4 apples
  • 1 tbsp cane sugar
  • 1 tsp, smothered cinnamon

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Preheat oven to 180 degrees Celsius (top/bottom heat). Grease a 26 cm springform pan. Mix the flour, cornstarch, sugar, baking powder, and salt. Combine the milk, oil, eggs, and vanilla seeds. Stir well, add to the flour mixture, and mix with a mixer for 1 minute. Peel and core the apples. Dice the apples. Mix the brown sugar and cinnamon. Pour the batter into the springform pan. Distribute the apples on top and sprinkle with cinnamon and sugar. Place in the oven (middle rack). Bake for about 35 minutes.
