Plum cake -a different kind-

Ingredients for 12 servings:

  • 500 g plum(s)
  • 4 eggs
  • 150 g sugar
  • 1 tbsp vanilla sugar (bourbon)
  • 175 g flour (wheat flour)
  • 1 tsp baking powder
  • 100 g butter, melted
  • 50 ml whipped cream
  • 75 g butter
  • 75 g sugar
  • 2 tbsp honey
  • ½ tsp ground cinnamon
  • 25 g flour (wheat flour)
  • 125 g almond(s), sliced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the batter, wash and dry the plums, halve them, remove the stones, and cut them into pieces. Using a hand mixer fitted with a whisk on high speed, beat the eggs with the sugar and vanilla sugar (add a tablespoon at a time) for 1 1/2 – 2 minutes until frothy. Mix the flour with the baking powder, sift, and stir in portions. Carefully stir in the butter. Finally, stir in the cream. Pour the batter into a greased springform pan (approx. 28cmØ) and cover with the plums. Bake. Electric oven approx. 200° (preheated), fan oven approx. 180° (not preheated), gas mark 3-4 (preheated). Baking time: 15-20 minutes. For the topping, heat the butter with the sugar, honey, and cinnamon. Stir in the flour and almonds and bring to a boil briefly. Spread the mixture onto the pre-baked cake and finish baking. Baking temperature – see above – Baking time: about 15 minutes
