Ingredients for 12 servings:
- 150 g plum(s)
- 1 tbsp lemon juice
- 150 g sugar
- some ginger
- 260 g flour
- 1 ½ tsp baking soda
- 100 g butter
- 1 egg(s)
- 240 g yogurt
- 1 packet of vanilla sugar
- some cinnamon
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat the oven to 175°C and line the muffin tin with paper baking cups. Wash the plums, drain them, and cut them into small pieces. Place them in a bowl and toss with lemon juice, 2 tablespoons of sugar, and ginger. Sift the flour into a bowl. Add 100g of sugar and baking soda and mix thoroughly. Melt the butter and place it in a bowl. Add the egg, yogurt, and vanilla sugar and whisk thoroughly. Add the wet ingredients and the plum pieces to the flour mixture and mix until the flour is fully incorporated. Divide the batter evenly among the muffins. Mix the remaining sugar with the cinnamon and sprinkle on top. Bake the muffins for about 20 minutes, until lightly browned. After 10 minutes of cooling, remove the muffins from the tin and place them on a wire rack to cool.
