Ingredients for 1 servings:

  • 250 g flour
  • 375 g sugar
  • 2 tbsp semolina
  • 5 eggs
  • 250 g butter
  • 2 lemons, squeezed
  • 500 g quark
  • 1 packet of vanilla sugar
  • ½ pack of baking powder

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

In a bowl, mix the flour and baking powder. Add 125g sugar, 1 egg, the juice of one lemon, and 125g cold, sliced ​​butter and whisk until crumbles form. Pour half of the crumble into a springform pan and press down evenly. Mix the semolina, quark, 250g sugar, 125g butter, vanilla sugar, juice of the second lemon, a little lemon zest, and 4 eggs well together and spread the mixture on the base. Spread the remaining crumble over the quark filling. Bake on a gas mark 3-4 for about 45 minutes (should be 200°C electric, 180°C fan-assisted – no guarantees). The cake can be baked a day in advance to give it time to rise.
