Peppermint syrup with lavender

Ingredients for 1 servings:

  • 3 liters of water
  • 2 kg sugar
  • 50 g citric acid
  • 36 sprigs of peppermint
  • 6 stems of lavender, with flowers

Instructions

Working time approx. 15 minutes; Rest period approx. 2 days; Total time approx. 2 days 15 minutes

If possible, don’t pick the herbs after a downpour. Boil the water with the sugar to dissolve the sugar. Add citric acid. Add the first 12 peppermint sprigs to the hot mixture until they turn brown—this happens pretty quickly. Then remove them. Once cooled, add the next 12 sprigs and let them steep overnight. The next day, replace them with 12 fresh sprigs. Towards evening, remove the sprigs and soak the lavender blossoms for about 4 hours. Remove and bottle the syrup. Tastes wonderfully fresh with seltzer!
