Peach and passion fruit cake

Ingredients for 4 servings:

  • 2 eggs
  • 85 g sugar
  • 85 g flour
  • 1 tsp baking powder
  • 1 tsp vanilla sugar
  • 3 cups of cream
  • 3 points cream stiffener
  • 1 can/n peach(s)
  • 250 ml passion fruit juice
  • 4 pts. sauce powder, vanilla (without cooking)
  • 2 points cream stiffener

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

For the batter: Beat eggs and sugar until fluffy. Carefully stir in flour, baking powder, and vanilla sugar. Pour the batter into a greased springform pan and bake at 185°C for 15-20 minutes. Allow to cool in the pan. For the filling: Beat 3 cups of sweet cream with 3 sachets of cream stiffener until stiff. Cut the peaches into small pieces and mix into the cream. Spread this mixture on the sponge base (leave in the springform pan). Then beat the passion fruit juice with 4 sachets of vanilla sauce and 2 sachets of cream stiffener until thick. Spread this mixture over the cream mixture and refrigerate everything together for 1-1 1/2 hours.
