Ingredients for 1 servings:

  • 240 g powdered sugar
  • 250 g desiccated coconut
  • 50 g flour, smooth
  • 4 pieces egg white
  • 100 g butter
  • 100 g powdered sugar
  • 100 g chocolate, softened

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Whisk egg whites and sugar over a steamer until frothy, fold in desiccated coconut and flour, spread onto a baking sheet (lined with baking paper), and bake for about 12 minutes at 160°C (fan oven). Let cool and cut out circles. For the base, I use wafers of the same size. Cream: Beat butter and powdered sugar until frothy, then stir in the softened chocolate. Stack the cookies together and dip the bottoms in the chocolate glaze.
