Apple Swedish cake with whipped cream and chocolate shavings

Ingredients for 1 servings:

  • 1 cake base
  • 6 apples, sour, firm, e.g. ‘Boskoop’
  • 1 cup water
  • 1 cup sugar
  • 1 lemon(s), juice
  • 2 packs of sauce powder (vanilla sauce)
  • 2 eggs
  • 250 ml whipped cream
  • 50 g dark chocolate shavings

Peel the apples and cut into small pieces. Bring to a boil in a saucepan with water and sugar. In a cup, mix the sauce powder with the lemon juice until smooth. Add this mixture to the stewed apples. Simmer until the apple mixture thickens. Remove from the heat and let cool slightly. Beat the two eggs well in a cup and fold in. Let cool until the apple mixture is just lukewarm. Spread this topping evenly over the cake base. Now chill in the refrigerator until completely cold. Just before serving, whip the cream. Sweeten with a little powdered sugar to taste. Carefully spread the whipped cream over the apple mixture so that no apples are visible. Finally, sprinkle the grated chocolate on top.
