Ingredients for 1 servings:

  • 250 g butter
  • 200 g sugar
  • ½ vanilla pod(s), the pulp
  • 1 pinch of salt
  • 375 g flour
  • n. B. Sugar for turning

Working time approx. 40 minutes; Rest period approx. 2 days; Cooking/baking time approx. 12 minutes; Total time approx. 2 days 52 minutes

The long waiting times add that extra something and make it particularly chewy. Makes about 80 pieces

For the best results, bake the cookies over three days. Brown the butter in a saucepan until golden brown (not too brown). Place it in a mixing bowl and chill overnight. The next day, cream the butter with sugar, vanilla, and salt until very fluffy. Then mix in the flour using the dough hook of an electric mixer. Form two logs, approximately 6 cm in diameter. If desired, coat in coarse sugar (I usually skip this step because the cookies are sweet enough for me). Wrap in aluminum or cling film and chill overnight. About 30 minutes after removing the logs from the refrigerator, cut into 3-4 mm thick slices. Place on baking sheets lined with baking paper and bake at just 160°C for 12-15 minutes until quite light golden.
