Ingredients for 4 servings:
- 3 tbsp sugar
- 100 ml water
- 100 g butter
- 100 g powdered sugar
- 1 egg(s)
- 200 g flour
- 30 g cocoa powder
- 100 g jam (currant, red)
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes
Combine the sugar and water, bring to a boil, and simmer gently for about 5 minutes. Chill. Cream the butter until fluffy. Gradually add the powdered sugar and finally the egg. Combine the flour and cocoa powder and mix with the butter and sugar mixture until a smooth dough forms. Let the dough rest in the refrigerator for 30 minutes. Then roll out and cut out any desired shapes. Bake at 180°C for about 10 minutes. Brush the hot cookies with the cooked sugar syrup. Once cooled, spread jam on the undersides of the cookies and place a second cookie on top, also with the underside. If you like, you can decorate the cookies with chocolate coating or icing. I don’t do this, though, because they’re tastiest the original way.
