Juicy carrot cake with apple and coconut

Ingredients for 1 servings:

  • 500 g carrot(s)
  • 1 apple
  • 100 g white sugar
  • 50 g brown sugar
  • 3 eggs
  • 250 g flour
  • ½ pack of baking powder
  • 1 ½ tsp cinnamon
  • 75 g desiccated coconut
  • 125 g butter or margarine
  • 1 pkt. chocolate coating, white or milk
  • 12 marzipan carrots
  • Desiccated coconut

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel and grate the carrots and apple. Add all the sugar and let it sit for about 15 minutes. Then add the remaining ingredients and mix everything into a smooth batter. Pour into a round baking pan and bake at 170°C for 50-60 minutes. Let the cake cool and garnish with chocolate coating, marzipan carrots, and coconut flakes.
