Satay skewers made easy

Ingredients for 4 servings:

  • 100 ml orange juice
  • 40 g parsley, frozen or fresh, chopped
  • 4 tbsp peanut butter, with pieces
  • 6 tbsp oil
  • 1 tsp Sambal Oelek, alternatively chili sauce or chili flakes
  • 4 tsp honey, maybe less, depending on the sweetness of the peanut butter
  • 1 dash of soy sauce, alternatively salt
  • 500 g chicken breast

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

With just a few ingredients that you can get almost anywhere.

Mix all the ingredients, except the meat, in a small bowl. The easiest way to make the skewers is to line up the whole chicken breasts one after the other and insert four skewers next to each other through all the pieces. Then separate everything from each other with a sharp knife. Simply cut off any excess on the left and right and put it on the skewers. Then press the finished skewers together firmly and make lots of small slits in the surface with a sharp knife so the sauce can penetrate deeply. Roll the skewers in the sauce and place them on a rack in the oven. Place a baking tray or roasting tin underneath to prevent drippings. Bake at 180°C fan/convection oven for around 10 minutes, until cooked through. At the very end, drizzle the remaining sauce over the top. This warms the sauce up. Serve with wild rice.
