Ingredients for 1 servings:
- 90 g butter
- 60 g sugar
- 1 egg(s)
- 25 g oat flakes
- 20 g desiccated coconut
- 120 g flour
- 75 g flour (wholemeal flour)
- ¼ tsp baking powder
- ¼ tsp baking soda
- 150 g chocolate, dark
- Desiccated coconut, for sprinkling
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 47 minutes
Beat the butter and sugar until fluffy. Add the egg and continue mixing. Then add the desiccated coconut, oats, both types of flour, baking soda, and baking powder and mix everything together. Form the dough into small balls and place them on a baking sheet (lined with parchment paper). Flatten with a fork to create a nice pattern. Bake at 180 degrees Celsius for about 12 minutes. The cookies should only be lightly browned. Let cool on a wire rack. Melt the chocolate, dip the cookies halfway into the chocolate, and place them on a wire rack. You can sprinkle desiccated coconut on top or leave them as is.
