Vanilla-flavored applesauce cake

Ingredients for 1 servings:

  • 4 eggs
  • 170 g sugar
  • 1 packet of vanilla sugar
  • 200 ml oil
  • 200 ml liquid, e.g. egg liqueur, milk, cream or fruit juice
  • 300 g wholemeal flour
  • 1 packet of baking powder
  • 1 jar applesauce, approx. 750 g
  • 1 packet of vanilla pudding powder
  • e.g. cinnamon

Instructions

Working time approx. 30 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 45 minutes; Total time approx. 9 hours 15 minutes

Makes approx. 16 pieces.

Beat the eggs, sugar, and vanilla sugar until fluffy and doubled in size. Add the oil and the second liquid. Slowly fold in the sifted flour and baking powder. Pour the batter into a greased cake tin and bake at 160 degrees Celsius for about 45 minutes. Do the skewer test. Once cooled, cut the cake in half. For the filling, dissolve the vanilla pudding powder in a little applesauce. Gently heat the remaining applesauce. When it is gently simmering, add the applesauce mixture. Season with cinnamon. Let cool briefly. Return the cake base to the tin. Spread the applesauce filling on top. Place the cake base lid on top and refrigerate for about 8 hours. Cover and decorate with whipped cream or buttercream, for example, if desired.
