Apple cake with caramel topping

Ingredients for 1 servings:

  • 3 eggs
  • 300 g sugar
  • 300 ml oil
  • 300 g wheat flour
  • 1 pinch of salt
  • 3 tbsp oat flakes
  • 3 handfuls of walnuts, chopped
  • 3 apples
  • 1 packet of vanilla sugar
  • 1 tsp baking powder
  • 200 g sugar
  • 90 g butter
  • 125 g cream
  • 500 g cream cheese
  • 125 g butter
  • 125 ml caramel sauce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

It’s best to start with the caramel sauce. To do this, heat the sugar in a pan over low heat until golden brown. Then add the butter, stirring constantly. Finally, mix in the cream and set the finished sauce aside to cool. Now for the batter, beat the eggs with the sugar and a pinch of salt until frothy. Slowly add the oil (continue stirring). You can now do the rest with a spatula or spoon. Roughly chop the walnuts and add them to the remaining mixture along with the flour, oats, and baking powder, and stir in. Finally, coarsely grate the three apples, including their skins, and add them to the batter. Pour the batter into a springform pan and bake at 180 degrees Celsius (top and bottom heat) for about 45 minutes. In the meantime, mix together the ingredients for the topping. Once the cake is baked and cooled, cut it in half and spread with some of the cream cheese frosting. Put the cake back together and spread the remaining cream all over.
